HAPPY CHRISTMAS!

It’s Christmas Eve and I’m sure visions of sugar plums are dancing in everyone’s heads as they trim the tree and sup mulled wine in preparation for tomorrows frivolities. All too soon it’ll all be over and brain power sapped from too many TV Christmas Specials you’ll be wanting some mental sustenance, and that’s where we come in.

Here’s a super easy, delicious and fun Thanksgiving recipe. I made it last year and it was a hit! I found it from cooks.com and made my own twists. Enjoy & Happy Thanksgiving!

Sweet Potato Balls

3 c. cooked yams

1/4 c. butter

2 tbsp. milk

3/4 c. brown sugar

1/4 tsp. salt

8 marshmallows

1/2 c. crushed corn flakes Mash

Bake sweet potatoes for around 30-45 minutes. Mash the potatoes. Add butter, sugar, milk, and salt. Take about 1/2 cup of the mixture and wrap around the marshmallow shaping it into a ball form. Next, roll in corn flake crumbs. Place in buttered baking dish and cover with aluminum foil. Bake about 20 minutes or until the marshmallow begins to ooze out. This recipe makes between 6-8 balls depending on how big you want them.
